The last MH we had had the built in satellite dish.  Our LD does not.
How difficult is it to hook up the dish and tripod.  I just know that my husband get frustrated if things don't work right the first time:)! So wondering if it would be better to just purchase one that is attached to the roof.  We see a lot of folks with the tripod method. Just wondering???

I'm going to make the assumption that you are interested in DirecTV's HD programming.
 It does take a little time to get the hang of siting in all 3 satellites on a tripod-mounted open-faced dish with multiple-LNBs, but lots of people do it, it just takes practice.  Get yourself a good satellite meter to help in the process.  Since the multiple-LNB dishes are larger and heavier than the single-LNB dishes, you'll want to get a good tripod like that found at http://www.tv4rv.com/sunshop/ .

If you want to spend the money for a roof-mounted dish, then I recommend the Trav'ler SK-SWM3 DIRECTV Slimline (SWM is new technology...if you're going to spend the money for a Trav'ler, get this dish, not the older SK-3005).
 Now, if you are not interested in HD programming, then, rather than a tripod-mounted dish, I'd go with one of the portable domes such as one of the Winegard Carryouts or the VuQube.  Keep in mind that if you later decide you want to view DirecTV's HD programming, you will NOT be able to do it with any dome.  So, before spending the money on anything, decide whether or not HD programming is important to you and buy accordingly.
