We're off this weekend to Oklahoma and then Texas, essentially making a beeline from L.A. to Oklahoma City/Norman, where we plan to visit the Cowboy Museum, etc.  We spent 2 months last year in AZ and NM, so we'll just be driving straight through those beautiful states this time.  Oklahoma and Texas (other than San Antonio & Austin), however, are virtually virgin territory to us. From Norman, we plan to meander south to Corpus Christi so see old friends, then head back to L.A. via Big Bend.  We have to be back July 2, so we only have a month for the whole trip.    Other than these two places, we're open to and very much ask for any and all suggestions.  No interest in the big cities.  I've copied some comments made on this forum on Texas, mainly about Fredericksburg and Big Bend.  We dry camp and use commercial, so .... any "must sees" and "don't misses" (campgrounds, sights, food) that you all have?  We have our Vespa as our "toad," so we can get around locally, within reason, after parking the rig.  The Memorial to the People and the Federal Building In OK City is IMHO something not to be missed.  Also in my fair city, San Antonio, must do's are a boat ride on the river downtown--see the Alamo--Visit the Market.  While in Corpus Christi, a short jaunt over to Port Aransas would put you on the Gulf of Mexico.  Much better RV Parks there and a free ferry ride if you come or go toward Aransas Pass.

Just a few suggestions, enjoy your trip.

My husband and I very much enjoyed touring the LBJ Ranch near Fredericksburg.  It is beautiful and very interesting.

Near Amarillo is Palo Duro Canyon, a state park and quite lovely.

Don't miss the lovely F'burg history museum in downtown F'burg. It's a treat. The military museum down the street is interesting, too.
 Don't miss going up to "The Basin" at Big Bend National Park. We took our 27.5ft MB up there no problem. You can camp up there, too. For an incredible hike in The Basin, take the trail to the "The Window:"

The Big Bend Hot Springs along the Rio Grand are a treat, too:

You can drive close to the hot springs for a shorter hike than we did.
 We normally camped at Rio Grande Full Hookup Campground in Big Bend (our favorite NP):

There's a dry camp area close to the full hookup area (see the third photo from the bottom of the above page).

The camp store/showers/etc is between the two camps.

When you visit Big Bend be sure to drive your toad up to the "Basin" and enjoy a short hike or a longer one to the "window" - a fantastic hike  you won't forget.  Also take time to view some of the many videos

In addition to the great suggestions....
 In FBG - Rustin' Rob's for sampling all sorts of dips, jams, jellies, salsas, etc (you won't need lunch if you stop there).  Lincoln Street Wine Bar.  The Nimitz and Pioneer museums.  Rather Sweet bakery, owned by the Pastry Queen, Rebecca Rather.
 H-E-B.  Yes, the grocery store.  Having moved to the Metroplex from Georgetown 3 years ago, we so...... miss shopping at HEB.  Try the pre-marinated, vacuum packed beef fajita meat if you like TexMex (HEB not Hill Country Fare brand).
