Replacing table and barrel chairs with sofa

We have a 2003 26 1/2 IB with barrel chairs and a fold-up table.  Would like to replace this with a jackknife sofa.  Has anyone done this? Checked with the mothership and got one answer, asked Steve and got another answer as to whether or not it could be done.  Looked in the LD enhancement site but found no info.  Any suggestions? Hopefully Jake or Lisa will pipe in here.  While they didn't replace it with a sofa, they did remove the built in table in their 30IB.
Apparently it was a huge PITA, similar to Andy removing the TV cabinet in Skylark.
