While you are driving across NM you will pass an exit to Clines Corners.  If you need a break about that time, give it a try.   It is a glorified truckstop, but it does have some rather interesting stuff to see (and buy if you are so a mind).  It is also the exit to Santa Fe, if you want to make a one day detour.  I'm afraid I can't help much because I try to stay off of major highways.

Edd...traveling along rte 40, if you like native american history or anthropology or archeology...or just want to wonder at those who came through these places, you might want to stop at Walnut Canyon, just east of Flagstaff.  This is a native american cliff dwelling probably dating around 1200.   Some hiking involved.  Then there is Acoma Pueblo's Sky City, near McCarty's NM.  This is the old town, up on a mesa.  It is (arguably) the oldest continuously occupied town in the US.  They take you up to the mesa in a bus, then there is about a 1 - 1.5 hr. guided tour.  Just before Albuquerque, there is petroglyph national monument.

All of these sites are less than 30 minutes from the freeway.

We stay at KOA's as a last resort, but if it is significantly closer to where you are going, it might make sense for you.  Most KOA' are better than they use to be.  You should expect to have decent hook-ups.... maybe even cable TV if that's important to you.  While they have gone a bit more upscale in their parks, they have gone even more upscale on their prices.

 In that case I can recommend Dinosaur Valey State Park in Glen Rose, Texas (North Texas):

We have been twice and enjoy it.  To quote from the site:

"Dinosaur Valley State Park contains some of the best preserved dinosaur tracks in the world. The dinosaur tracks are located in the riverbed, so please call ahead to check on river conditions. There are two fiberglass models; a 70-foot Apatosaurus and a 45-foot Tyrannosaurus Rex. They were built, under commission of the Sinclair Oil Company, New York World's Fair Dinosaur Exhibit of 1964 - 1965.
Other activities include camping, picnicking, hiking, mountain biking, horseback riding in a separate 100-acre area (no horses furnished), river swimming and fishing, and wildlife observation.
There is a portion of the Texas longhorn herd in the park."
