Water Heater and Fridge Woes

1994 LD with Atwood G6A-7E hot water heater (HWH) and Dometic fridge (can't recall model off hand).
 Fridge - it operates and cools just fine on DC. I would describe its operation on propane as intermittent. It lights with absolutely no problem so I know that is not the issue - it just won't stay lit. On our maiden voyage, it would stay on an average of 10 minutes, but stayed on as long as about 8 hours, but as short as 2-3 minutes. There are no obstructions in the burner that I can see. Based on the LD companion, it looks like this could be a thermocouple?

I'm also thinking the section in the LD Companion with the heading "Won't operate on propane unless warmed up on AC first" may apply. I'm not sure I understand the principle there - why is it a problem if the flame relights - that seems like it would normally be a desirable outcome. Any other suggestions on this? Where can I buy these parts, hopefully without paying a premium.

The HWH seems like a more serious case. I get absolutely zero activity from the HWH. When I turn on the DSI switch in the LD, the light stays on. No sounds come from the HWH area. No smell of propane. It is clean in there so there shouldn't be any obstructions.

I see in the LD companion that the thermal cut off is one device to check. Mine seems fine, operating like a diode. It is definitely not open, which I think would be the failure mechanism if I'm not mistaken. The rest of it I'm completely lost. I am very handy but I can't make heads or tails of half of the terminology in either the LD companion or the Atwood manual - and there don't seem to be any illustrations to indicate what is what. I do see in a prior post that this happened and someone replaced the board and it was fine. The fuse to the HWH is good.
