Capitol Reef is my absolute favorite park in that part of the country...it's so accessible, and if you're lucky it might rain a bit and give the rock formations more sheen and depth. Capitol Reef and Canyonlands were the reason we decided to tow a 4x4 so that we could explore the back country of both parks. I don't know how you're going, but be SURE to drive SR-12 -- the portion between Escalante and Torrey has absolutely fantastic scenery. Stop at the view points, in particular Head of Rocks and Homestead. The view at Head of Rocks looks like a moonscape, and at Homestead you can see the Waterpocket Fold (part of Capitol Reef NP), and the northern portion of Grand Staircase Escalante NM -- awe inspiring! Also, if you have a toad (doesn't necessarily have to be a 4x4 but should be high clearance), drive the road that goes down the Notom-Bullfrog Road on the eastern side of the park and ascend the Waterpocket Fold. The trip up the Waterpocket Fold isn't for the faint of heart, but you'll be on the inside (we drove it in a 1-ton pickup with duallys).
