What’s under the vinyl end caps?
Does anyone know what is under the vinyl end caps and vinyl dinette trim?  Is it plywood?  I would like to remove the vinyl, but am hesitant not knowing what I will find. Is it wood I can finish or paint as is or will I need to attach finished wood or trim on top.  See pictures.

It's wood, what kind, I can't say. Doubt it's a grade that is worth finishing.
I can't figure out why you would want to remove the vinyl. Ours are fabric covered. We put vinyl over the fabric as the fabric was showing dirt and wear. I know it's wood as we stapled the vinyl on.

I can't answer your question as I've never removed either. But I would caution you about removing what you call the vinyl end cap. I've hit my head on that overhead cabinet a few times in our Rear Bath. With the padding that's not a problem, but with plain wood it might be.

There was just a post a couple weeks ago with pictures of the square piece - try search words  end pad finish fabric - with a time of the last 30 days and it should pop right up.

You can answer your own question by removing the end piece, it should be held on with screws that are accessable from the inside of the cabinet.
At best, you will find a piece of the vinyl covered, luan paneling, complete with screw hoses.

The padded end is a needed piece, LD wouldn't bother with the expense if there wasn't a good reason for it's existence.
I have bounced off our LD's padded end once or twice and have been grateful for it being there.

I'm pretty sure it's wood under the dinette vinyl (it feels like it anyway).
