Hi Maryann,
It looks like you have received a ton of good information to digest and are formulating a wise plan. I would like to point out two things I don't believe have been mentioned to consider when trying to answer your question. The first is to "know thyself (and husband)" before making any decision (and it seems as if you DO have a good handle on this). So many RVers (and I'm referring to the ones who actually enjoy the RV lifestyle) wind up trading in their first motorhome for another within the  2-3 years. Once actually living/vacationing in an RV they find a number of things about their choice not working. So the more you understand about how you will use the RV, what you know you will like or not, the better chance you will have of making your initial RV the correct one.
The second point may not ease your decision as ease your conscience. Perhaps you are familiar with an old Yiddish expression, "Man plans, God laughs." While it is important to make plans for down the road, no matter how well detailed or informed they may be, life has a way of throwing unforeseen things in our way. Circumstances, our own values, health (especially for people of a certain/or any age) all have a way of changing our plans in unanticipated ways. After 5 years  you and your husband may decide you love your LD and the RV lifestyle and want to keep going or you may have realized after just a few trips RV travel is not for both or one of you, or anything in between, not to mention all the other life altering events that could occur in the next 5 years. So I guess what I am suggesting is to not give too much importance into the resale price in 5 years. Otherwise, good luck with your research and shopping.

If I was buying used SOB (some other brand), I would look for a two or three years old model, one that has had enough time to get the faults corrected.  I would've have hard time buying any Class C new, besides a LD.

If someone asked me for advice on buying a new or fairly recent used Class C (with cab-over for sleeping) other than Lazy Daze, I'd have trouble.  I'd probably urge them to look at an older (2006 to 2009) Class A gasser like a Monaco/Holiday Rambler or a Newmar Bay Star.   But I couldn't recommend any recent SOB of Class C's for a variety of reasons.   At that's kind of disappointing.
