Roasting in an LD July 30, 2010, 05:13:25 pm Yahoo Message Number: 114909While this may not suit all tastes and budgets, Trader Joe's sells a very good filet mignon roast that is packaged for and cooks in the microwave...and it is delicious! WFP (The Pilot) loves roast beef and this is an asked-for item. They also do a packaged for and cook in the microwave rack of lamb, which is likewise delicious. In both cases the cooking instructions are spot on and produce a very tender meat dish. Entirely different from a crock pot, dutch oven and/or grilled presentation, but easy to produce from the microwave. Both are sold in the cold cases, not frozen food aisle, of TJ's. Both, however, do freeze well. We don't travel with a BBQ, but do grill most days while at home base...and always did 12 months a year before we climbed aboard "Wild Thing" for our long rambles.TinaP 2006 MB "Wild Thing"
Re: Roasting in an LD Reply #1 – July 30, 2010, 11:47:25 pm Yahoo Message Number: 114914The rack of lamb we bought from Trader Joe's came with directions for oven, micro-wave, or boil in the bag it came in. (It actually pre-cooked, we're just reheating it.) I figure ovens vary, microwaves do too. But boiling water is boiling water, at least at sea level. The lamb was perfect, finished on the outside, pink in the center, great flavor! As usual YMMV /noel/

Re: Roasting in an LD Reply #4 – July 31, 2010, 02:43:14 pm Yahoo Message Number: 114923Has anyone tried the FlavorWave or NuWave convection oven? I've had my FlavorWave five years, and use it several times per week for roasting chicken breasts, fish, veggies, frozen pizza, etc. It's low wattage, doesn't heat up the room, and I've been satisfied with it. I haven't tried to cook a roast or an entire meal with meat, potatoes and veggies. Has anyone tried one

I used to write an occasional column for the website RVers Online titled "The Opinionated Cook"; this is a link to a piece on foil cooking: http://rversonline.org/OpCook5.htmlReynolds offers foil cooking tips: http://www.reynoldspkg.com/reynoldskitchens/en/tips_category.asp?cat_id=1679And, if you run out of ideas for stuff to cook in foil packs, try this link! http://peaceandcarrots.homestead.com/FoilPacketMeals.htmlOne additional tip: avoid using a recipe that includes tomato-based "spaghetti sauce" that will contact the foil when cooking. Tomato-based sauces (and red chile sauces, too!) eat through the foil; looks like a shotgun blast hit the packet and you'll end up with little "dots" of melted aluminum on your food. ;-) (Same results if you cover a baking pan of enchiladas, lasagne, or anything else with chile or tomato sauce with foil.)Joan

Re: Roasting in an LD Reply #14 – July 31, 2010, 10:36:20 pm Yahoo Message Number: 114939I will take my chances with aluminum as I believe the latest studies indicate that Alzheimer's is more related to harding of the arteries than anything else. I can tell you that I do not cook tomatoes NOR do I cook egg plant in aluminum. I once ruined a very nice batch of egg plant that I tried to cook in an aluminum pan (cheap one that wasn't ionized or anything) along with some tomatoes, onions, and garlic. It has that lovely metallic ZING flavor. I have a lot of friends who have sworn off aluminum in the form of antacids, antiperspirants, cookware. I've heard this all before. Hey, if you think aluminum is dangerous, have you guys read the warnings on nonstick cookware? ? ? ? ?? Don't heat this stuff up if you have a bird in the house--apparently it's a real canary killer. Makes you wonder. If foil isn't good for you, maybe you could cut yourself a nice switch of Oleander and roast your meat on it over the fire Maybe this is just God's way of taking back what we stole from the tree of knowledge? ? ? ? ?Becky Carrier__
Re-re-re-redundancy Reply #15 – July 31, 2010, 10:41:31 pm Yahoo Message Number: 114940Looks as if it's time for a reminder, folks: if you want to win friends and influence people, posting a message that contains copies of entire older messages isn't the way to do it. One message posted tonight had 3 lines of new content... and 156 lines of stuff that we'd already seen, in some cases as many as three times. I know that Google and most email programs make it easy to commit this netiquette faux pas by automatically copying all the content of the replied-to message into a new one, but it doesn't have to be that way. It only takes two keystrokes, "select all" (control-A) and "delete," to get rid of all that redundant junk. If you want to copy a selected phrase from the previous message to show what you're referring to, it only takes two more: control-C to copy and control-V to paste. Not everyone here is on a super-fast connection with unlimited bandwidth, and even those who are don't like to scroll through pages of text that they've already read three or four times. So please--delete all that repetitious stuff before you post, and you'll win the gratitude of your fellow Lazy Dazers. :-)Andy Baird http://www.andybaird.com/travels/
