Forgot to mention the LD has a solar panel and an inverter as I am planning on doing a lot of boondocking.

A crock pot will take a lot of power for the number of hours it must cook...more than I'd want to use when boondocking.
Instead, why not consider what many of us have: a thermal cooker?  These require absolutely no electricity to run, just a bit of propane to get the contents of the inner pot up to a boil.
To a search for thermal cookers on this Group's website and you'll come up with lots of discussion.  I have a Nissan Thermal Cooker which I really like...Kate has another brand, Supen-something (I'm sure she'll post the brand name).

--- I also have the Thermos Nissan; it's not cheap, but it's a very good product and is great for boondocking!

The Thermos Nissan is hard to find, and is listed as "no longer available" on the websites of several vendors who carried it before.
I don't know if the manufacturer is discontinuing the product, but I did find three vendors who still *may* carry it:

I think that Kate has the "Sunpentown"; this version may be more available than the Thermos Nissan, and it does cost less. Kate can tell you how well it works for her.  ;-)

Actually, we had the Sunpentown, but got rid of it (it was around $50).  For me, the pressure cooker is fine, quicker and easier than the thermal pot.  Since I was never using it while traveling, we just found we used the pressure cooker more often.

I have a thermal cooker, thanks to Andy. It's not a Nissan but I love it. Last year we were at Betty's RV park in La. and I had to cook corned beef and cabbage for a St. Paddy's day pot luck. I cut the meat into 3 pieces and cooked it overnight. It turned out just right and it got devoured in the first 10 minutes of the GTG. It was the first time I used the pot and I didn't know what I was doing but what the h??.
There was a great place down the road for cracklin' and boudin if it was a disaster ;-).Trust me! If I can do it anyone can.

Karen - mouth watering for some good Cajun food!
