Weight limits
The way I read this chart there is about 5,500 pounds allowable for a tow vehicle and my 27' MB.
Provided the hitch is strengthend  of course.

Am I reading this correctly?

Yes. As long as your LD is within the 14.5 maximum. These LDs have really good carrying capacity.

There was a thread with photos awhile back regarding how the LD factory bolted on the receiver. I can see how the bolts and bolt holes could eventually wear. We are towing a Suby which weighs about 3,500# so I'm thinking about getting it welded on.

Your 2021 LD should have a 22,000 lbs GCWR instead of the 20,000 lbs GCWR on the page you provided, are you looking at your old LD's Owner's Manual?
Your potential tow rating is a crazy 7500 lbs, a lot more than I would want to pull.

This was the only LD manual Todd had.  It's a 2019.
