Andy, I remember reading about that rock attack.
I am guessing the elbow fitting is supported by Metal pipe strap to the vertical metal plate but the picture doesn’t show it or how it might be attached on the other side of the fernco fitting. 

Pipe strap often doesn’t look tight but holds things firmly.
The ferncos is are pretty easy to replace as
long as there is access to work on them.

Tom, I would suggest thoroughly check the new pipe route out before committing. 
There might be horizontal studs to go through (there is one above and below the window that might have been extended further).

In our TK the sink drain pipe goes into the wall between the shower and kitchen, into the kitchen cabinet opposite the bathroom sink.  Then turns and follows that wall between the shower and kitchen towards the outside drivers side rv wall. I can't see without emptying out our upper kitchen cabinet, but likely it connects to that one vent going up, along with connections from the shower (lower down) and the kitchen close to the same level as bathroom sink - since everything is so close together there is likely not separate vents.  I am guessing this is a wet vent (water goes down, air goes up in the same pipe).  But again I am guessing as I can't see it clearly without emptying out that entire cabinet under the sink and I didn't take pictures when I looked at it all back when. Ours is an 89, so things might have changed from then but the TKs have all the plumbing fixtures in a very close area, so sharing a vent would make sense (with good sloping on all horizontal pipes).

In houses the vent has to go a certain distance above the roof/ground (to try and keep any smells up high).  There are no RV codes that I have heard about and the ones I see are not far above the roof.  I know composting toilets vent straight out the wall in both RVs and non septic/sewer cabins but the composting part (solids) doesn't have any odor (smells like soil according to documentation).

Larry, in your front lounge do you have a separate vent for your shower, or does it also use the sink air admittance valve since they are very close?  It might be a wet vent also if your sink dumps down that same pipe that the air admittance value is on top of.  Do you have a separate vent for the kitchen sink since it is further away?

absolutely, doing that check asap in order to jump on this project piece or go the easy route of just cutting the pipe and reattaching through the new counter.
