Takes longer (it needs to rise overnight), but it's very little more effort, and requires only the simplest of tools. (And no electricity.) And the crust is heavenly! Allow me to quote Colette (in "Ratatouille"): " 'Ow do you tell 'ow good bread eez, weethout tasting eet? Not the smell. Not the look. But the sooouuund--the crust! Aaaahh... a symphony of crackle! Only great bread sound thees way." Bread machines can do many things, but a truly great crust is something I've never been able to coax from one."Is Gertie still in good hands?"She was when last reported. I sold her to a friend; years later her sold her to a neighbor who needed a place to stay while recovering from surgery; he in turn sold her to a couple who, when I heard from them six years ago, were using her as a cabin in the snow. "Unfortunately she's not drivable right now. When we fired her up to move from that [farm] location, to the 10 acres we bought and live on now, she ran for 30 seconds then cut out. We're pretty sure it's either bad fuel or a clogged up fuel line, as the gas in there sat for a while. We do our traveling in a station wagon to save on gas. But a good home, she still is!"That's all I know. That snow load looks scary... I hope my Eternabond resealing job is holding up!
