Good tip! Ultra-high-temperature (UHT) pasteurized milk in Tetra Pak "bricks" is a handy thing to keep around in case you (or the local store) run out. In my opinion, UHT pasteurized milk is ruined.
I drink raw milk, just like when we were all kids.
The problem is finding it in many places is almost impossible with the stupid regulations most states have.

I agree raw milk and products made from it are delicious. But in my opinion they need the regulations. I had an encounter with listeria after eating a yummy soft, raw milk cheese back in 2017. So you need to know and trust your raw milk source.
It’s not shelf stable, needs to be refrigerated, but Trader Joe’s ultra-pasteurize organic grass fed milk is quite good, actually their best milk, and lasts for a couple months in the fridge.
I hesitate to start a debate here, but there really is no question about it: raw milk is unsafe. Every reputable medical authority agrees on that. There's a broad range of diseases transmissible by raw milk, and disease outbreaks can and do happen to both large and small dairies. Now that H5N1 bird flu has been documented in raw milk, it's riskier than ever.
Laws requiring pasteurization exist for a reason: to keep diseases from spreading.

I've been using that for a while. Buy it at Dollar Tree. They have whole, 2%, and 1%. Even after opening and refrigerating, it lasts a loooong time.

I'm currently in Mexico and "shelf stable" milk is a big thing here. There was another brand that Dollar Tree used to carry, that I bought during the pandemic. The only thing I'm finding a bit different here is that the milk I buy is fine for 4-5 days, but turns sour after that. It must be a difference between the processing compared to the USA as the temp in my refrigerator is fine...

If you have an Instant Pot (or other electric pressure cooker) with a Yogurt or Sous Vide button, you can make cold start yogurt with ultra-pasteurized milk (if it's not ultra-pasteurized, the boil method must be used). I usually use Dairygold Fit or Fairlife milk, although I've also used Costco's ultra-pasteurized organic milk to make yogurt.
