We've thought about doing the same thing with our coach and figured on using 1" tiles with plenty of grout to smooth out the edges 'round the pedestal. An alternative to using locally sourced Mexican tiles was for Kim to make some as she is an artist comfortable with working with clay, multimedia.
BTW, I like what you did around the base of the shower - looks very nice.
