Anyone have an opinion on this upgrade, and if so, reasoning. Is it worth the $750.

The "upgraded leather" seats are not real leather; they're polyurethane. A search on "ultraleather" will bring up the specs on this material.

In situations of this kind, I consider two things: Whether I like it and whether it will increase resale value if I want to sell my unit. In the case of the seats, I like them and they might increase the resale value.

I ordered the Ultraleather, theorizing that the it would be one less thing the cats could sharpen their claws on. However, they manage to leave small punctures when they launch off the backs. Sigh.
We recently saw/felt the newer Ultraleather at the factory and it is very soft and smooth. Our older version is not especially hot in the summer nor cold in the winter - contrary to popular belief. It has held up beautifully.

If you're budgeting carefully, don't forget. The coach will be delivered with empty storage bins. There will be plenty of things to spend money on in your first season.

I generally prefer cloth seats for long drives because the cloth breaths better.. At a Northeast LD event I was able to sit in a new Midbath. That RV had the cloth seats. The new seats are much more comfortable than the ones in my 07. The side bolstering and over all feel were much better.
On the other hand we have dogs. Our Midbath has the optional seats. They are easy to clean - though our dogs are generally not that messy.
I do not believe that one or the other will have a significant impact on the long term value of the RV. So this is more a life style and personal choice. Consider how you will be using the RV. Do you plan on a number of very long trips. I find that I can easily do 800 miles one day but doing that distance more than one day at a time takes a toll on my overall enjoyment of the trip. When I can I try to limit long trips to the range of 300 to 400 miles a day. This is even more true when I am traveling with my wife (not yet retired - so fewer long RV trips). She finds the 07 passenger seat uncomfortably restricting. The extra 6 inches in the cab of the newer midbath mentioned above made a big difference in comfort. If you will be doing mostly the 300-400 mile trips or less at at shot I think that how the seat breaths is less an issue (I have done the long trips in August and February so I was driving in cold as well as hot and very humid weather).
The newer Lazy Daze had many features that I really like when compared to my o7. You're in for a real treat.

Tom, I am going to assume you are getting a mid-bath. Do not get the pedestal table, as it is wobbly and way too narrow to use comfortably between the two sofas. An option could be to have LD install the table/with extension from the 24 ft. Twin/king on the rear wall between the sofas. The extension can be stored table stores in the closet. The main table can be made removable if you desire and can be stored behind the passenger seat.

And I thought it was just a bad table choice by the factory that built my SOB! Sounds like pedestals are just a poor choice, period.
I replaced the pedestals on the dinette with a folding leg on the aisle side of the table, and mounted the other side to the wall with a full width aluminum angle and "industrial Velcro" so it could be removed if we needed another bed. It's solid, and there are no legs under it to get in the way of our feet.

I have a 2014 TK. I like the "leather" seats. Are they worth $700, they look and feel good to me. The only down side in my family is we travel with two cats. Soooooo we have to cover them or live with tiny holes as my boys love to use my back and head to get to their beds. We did cover both seats with sheep skins. IMHO sheep skins are the only way to go when driving any distance over 20 miles.
As for the Sirrus radio. It's a Sony Bluetooth Sirrus enabled radio. You'll have to buy a subscription to Sirrus/XM. It also has a USP port. You can attach an IPad or IPod to this port. Also comes with the ability to stream Pandora. I feel it's a good car radio for the price.

How about getting the standard seats and ordering fitted seat covers? Even "really good" ones cost about $ 500 for both front seats and you can change them out if you change your mind on what you want or they are worn out. If you're worried about preserving the resale value of your rig, they keep your seats in perfect condition underneath.
